Leaving home at only 16 and moving to London was always going to mean than Dan would follow his dream and become a very talented chef. After graduating from Westminster Kingsway College, he became part of the brigade at The Royal Garden Hotel where he spent 4 years. Whilst here he competed at Hotelympia in the Craft Guild of Chefs where he received 2 bronze, 2 silver and a gold. Working his way through the ranks in some amazing kitchens, including a stint at the South Korean Winter Olympic Games, Dan’s passion and artistic flare for great British produce can be seen in his ever-changing menus and specials.
Mel may only be pint-sized but she brings energy and enthusiasm by the barrel-load. Her career in hospitality began as a happy accident after realising studying fashion design was distinctly not for her. Picking up a waitressing job in a local brasserie, her natural hosting abilities shone through and she swiftly took the helm as restaurant manager. Five years later, she took the move to pubs and has now joined team Cleaver as General Manager. In her spare time she’ll be hitting the gym, taking in the Bedfordshire countryside with her beautiful pooch, Pedro, and then making up for calories burnt in pizza.
